Heavy whipping cream 225ml
Rum 25g
3 egg yolks
Unsalted butter 45g
15g sugar

Pour the chocolate into the hot egg yolk mixture and stir well. Add rum, 25g whipped cream and stir well.

Cream and cooled chocolate paste. Mix a small portion of the cream with the chocolate paste before mixing the chocolate cream with the remaining cream.


Pour the mixture into a mold and freeze. Freeze after about 4-5 hours without stirring.

Green Tea Ice Cream

Matcha ice cream

原料
3 egg yolks
Granulated sugar 80g
Heavy whipping cream 250ml
Matcha powder 10g

The egg yolk and sugar are mixed and the egg yolk is light yellow.


Whipped cream to five distributions.


Mix matcha, custard and cream and pour into a mold and freeze. Freeze after about 4-5 hours without stirring.

Vanilla ice cream

原料
220ml
2 egg yolks
55g sugar
Vanilla Pods / Vanilla Extract

After mixing vanilla seeds / flavors with egg yolk and caster sugar, heat and keep stirring under water.

Whipped cream.


After the custard has cooled, mix with the cream. Pour into a mold and freeze. Freeze after about 4-5 hours without stirring.

note:
1. Egg yolk mix should not be overheated.
2. These ice creams use a lot of cream, so there is no need to stir in the middle; the ice cream with a large milk content needs to be stirred to create a fluffy mouthfeel. Like me (lazy) Huan (cancer) milk (late) oil (period) children's shoes may wish to try this ice cream.
3. Because I made a lot of ice cream, I found a lot of protein at home. Macarons or fried with bacon are good choices. Because I'm too lazy to make macarons (it seems really lazy), the quick way to eliminate protein this time is to doProteoglycan. After passing 90g of protein and 60g of white sugar, squeeze into a cute shape with a decorative mouth. Bake at 210 degrees for about 45 minutes (depending on the size of the extrusion). The little white dumplings in green tea ice cream are protein sugar. The brown one is cocoa powder.
